Salsa Criolla

This is one of Peru’s most popular side dishes and the easiest to do.

Basically is very thin sliced red, Aji Amarillo (Peruvian orange chilli) but in England I use red chilli thinly slice and parsley roughly chopped, then you add the juices of 3 or 4 lemons, salt and pepper. Toss everything together, stored in a clean glass jar in the fridge and enjoy. I have it with beans, pork anything really.  Oh and it’s the main ingredient on our National Peruvian sandwich called Butifarra (I’ll explain what that is next time) enjoy.

Use a glass jar to keep your salsa fresh and airtight
